In Mangalore, a coastal city in Karnataka, India, pickles are an integral part of the local cuisine. Two popular types of pickles from the region are "Mangalore Cut Mango Pickle" and "Roasted Tender Mango Pickle."


Cut Mango pickle is made with raw, firm green mangoes. The mangoes are cut into small pieces or thin strips, hence the name "cut mango pickle." The mango pieces are then mixed with a blend of spices and seasonings, including mustard seeds, fenugreek seeds, turmeric, red chili powder, salt, and sometimes asafoetida.


Roasted tender mango pickle, also known as "Aapemidi pickle" in some regions, is made with small, tender, unripe mangoes. The mangoes are typically sun-dried until they become slightly shriveled. Then, they are roasted on low heat to enhance their flavor and bring out the sweetness of the mangoes. The roasted mangoes are mixed with a blend of spices, including mustard seeds, red chili powder, salt, fenugreek seeds, and turmeric.
